

CHIPKO: tree huggers, land protectors & ecofeminism
SOLD OUT! A seated dinner & presentation on the Chipko movement by chef Surbhi Sahni and Leo Kirts at BOYFRIEND co-op. The first treehuggers of India protected their forests from commercial logging, preserved subsistence foraging practices, and organized hill women across the Himalayas against deforestation in the 1970s. Our menu is inspired by regional Uttarakhand cuisines and charts the Chipko movement course by course featuring Burlap & Barrel single origin spices.

MENU
I. Kandhalee Ka Saag & Ker Sangri - nettle leaves, green chilies, beans sabzi
II. Pahadi Ras (Kulthi Dal) & Bhang Ki Chutney - black horsegram, cumin rice, hemp seed chutney
III. Pahadi Aloo Ke Gutke & Fingermillet Mandua Ki Puri - spiced potatoes, Kashmiri chilies, fried flatbread
IV. Cashew Firni - sweet rice, cashew cream, macerated berries or Singhaldeep - fried rice fritter, caramelized banana
Everything is vegan with gluten-free options. Served family-style and eating with your hands is encouraged. :)
