Tim has spent decades building a personal relationship with tea—sourcing, storing, and revisiting leaves over time. This session draws from his private collection, offering a chance to taste teas he’s carefully kept and observed as they’ve evolved.
Together, we’ll explore what makes aged tea distinctive, from its history to the subtle changes that come with time. The experience is guided but relaxed, centered on tasting, conversation, and paying attention to detail.
In this 75-minute session, you’ll learn the basics of tea aging and sample a small selection of vintage leaves. Some highlights from our cabinet include raw puerh and yancha aged 20+ years.
Seating is limited to three guests. All teas are single origin and sourced directly. We look forward to sharing a pot with you.
