Open Table - Scaling innovative food products
We’re excited to introduce one of our Open Table Discussion leads for Foodtech Forum 2026
Marilyn Rayner, PhD, Technical Innovation Director at the Green Dairy, will host a session on: “Start-up to Scale-up -
Discussing challenges and opportunities in scaling innovative food products and processes”
Join this discussion to explore the practical realities of scaling next-generation food innovations. Taking promising prototypes from concept to scalable, competitive products is no easy task.
Common technical hurdles include gaps in mid-scale infrastructure, limited downstream capacity for drying, separation, and texturization, and challenges in integrating bioprocessing with final food production. At the same time, there are clear opportunities to improve both efficiency and sustainability, particularly through better use of side streams and more integrated processing approaches.
This session offers a space to exchange insights, build connections, and identify collaboration opportunities, helping accelerate the journey from early innovation to scalable, market-ready food solutions.
If you are a start-up navigating scale-up challenges, or a technology provider, or have scale-up infrastructure, or have great ideas and want to share, please bring your experiences, questions, and energy to the discussion, your input will shape the conversation and catalyze new collaborations!
This conversation is at blue table 2. To participate in this event you need to sign up to the Foodtech Forum 2026 first.
