Mark brings Michelin-level craft and sustainability in equal measure. After cutting his teeth in London’s top kitchens (Head Chef at Notting Hill Brasserie—three AA rosettes, Harden’s Remy award, Harper’s & Queen Chef of the Year nominee), Mark stepped into a pair of Wellington boots to map the UK’s farms firsthand. That journey became The Food Initiative—his principle for sourcing and serving the best British, sustainably grown ingredients.
