Led by Jessica Wang of Picklé, this session explores fermentation as culture and continuance — where salt, time, and microbes transform simple ingredients into living nourishment. Guests will observe a seasonal pickling demonstration and taste a selection of vibrant, small-batch ferments.
Together, we reflect on the shared language between gut and ground — cultivating the inner ecosystem as we would a garden.

About Jessica Wang, Picklé
Jessica Wang is the founder of Picklé, a fermentation studio rooted in seasonality and cultural preservation. Through workshops and small-batch ferments, Picklé reconnects people to traditional methods of nourishment and the living intelligence of microbes.
In collaboration with Good Bacteria at Rewilding Lab
Hosted within Rewilding Lab, a living installation created in collaboration with Good Bacteria and spatially designed by PADMA, this workshop unfolds inside an immersive environment exploring microbes, soil, fermentation, and everyday nourishment. Conceived by PADMA as a sculptural, garden-like landscape, the space invites guests to slow down and consider the parallels between gut and ground — tending the inner terrain as we would a living ecosystem.
About Good Bacteria
Good Bacteria is a rotating synbiotic system designed to restore microbial diversity, the foundation of a healthy gut ecosystem. Developed alongside leading microbiome researchers, it introduces varied probiotics, real fibers, and a targeted postbiotic to reflect the dynamic nature of the gut microbiome.
