Chicago Local Series: TPPG x Oyster Edition
We're taking over a speakeasy in the West Loop.
Laberinto sits one level under Trino on Randolph. Low-lit, vinyl going in the background, a name that doesn't explain itself until you're standing in it. Mexican mixology done properly. The kind of place where at least one cocktail arrives looking ridiculous and tastes better than it has any right to.
We're also doing a short mixology demo while we're there. Nothing long, nothing precious. One of their bartenders walks us through a drink, you get your hands on it, then we get back to the actual point of the night.
Which is this: some fellow Chicago People People, off the clock, close enough to actually hear each other, in a spot that has never once asked anyone what they do for a living.
Food that shows up hot and gets eaten standing up. Cold beer for the people who want cold beer.
