Join us for a special edition of our sommelier series, Atelier de Bulles, a guided tasting workshop dedicated entirely to the world of sparkling wine.
Designed for women who want to move beyond “I like bubbly” into real understanding, this interactive workshop explores the styles, regions, and methods behind some of the world’s most celebrated sparkling wines.
Together, we’ll taste and compare expressions of Champagne, Crémant, Cava and Prosecco, learning how professionals evaluate texture, acidity, mousse, structure, and origin.
You’ll learn how traditional method differs from tank method, what vintage and dosage actually signal, how terroir shapes sparkling wine, and how to approach a wine list strategically when choosing bubbles for an apéro, celebration, or dinner.
Why This Matters
Sparkling wine often appears in moments of celebration, but it deserves to be understood beyond special occasions.
From business dinners and hosting to navigating restaurant wine lists or selecting a bottle for a gathering, knowing how to choose and speak about sparkling wine with confidence is both a practical skill and a form of cultural fluency.
Once you understand style, origin, and production, ordering bubbles becomes far more intuitive and far more fun.
About Carolyn
Carolyn Aubry is a Montreal based sommelier with over 15 years of experience in the restaurant industry. In 2018, she became a certified sommelier with her WSET 3. She has worked in several wine focused restaurants such as Loic, Provisions, Polari and was the owner of her own wine shop, Vinorama.
For the past six years, Carolyn has focused on private wine education that is accessible, with the goal to remove the pretension that can surround the wine world.

Culinary Pairing
The tasting will be accompanied by a curated cheese and bites pairing by Chef Ashley Thornton, designed to complement the sparkling wines we’ll explore throughout the evening.
Sparkling wine is one of the most versatile styles for pairing, and experiencing how acidity, salinity, texture and effervescence interact with food will deepen your palate in a way theory alone cannot.
What to Expect
6:00 PM – Arrival & Welcome at Sub-Zero, Wolf & Cove
Settle in, connect, and prepare your palate.
6:15 PM – Guided Workshop & Tasting
We’ll cover:
– Champagne, Crémant, Cava and Prosecco: what differentiates them
– Traditional method vs. tank method
– How to read sparkling wine labels and quality signals
– Dosage, vintage and what influences style
– A simple tasting framework for evaluating bubbles
– How to order sparkling wine for the table with confidence
– Food pairings, serving temperature and glassware basics
– How to choose the right bottle for entertaining or gifting
Throughout the evening, we’ll taste and analyze multiple sparkling wines together.
8:00 PM – Open Discussion & Wrap-Up
You’ll leave with sharper instincts, stronger vocabulary, and a deeper appreciation for the art of bubbles.
Members will receive Carolyn’s workshop presentation following the session, including tasting frameworks, producer notes, and practical reference tools you can revisit before your next dinner party, celebration, or business dinner.
