About Event

How do you learn wine the way a sommelier does and order it with confidence?

This guided tasting workshop is designed for women who want to understand wine beyond preference and feel at ease ordering for the table in professional and social settings alike.

We’ll taste multiple wines together, analyze them in real time, and learn how professionals evaluate structure, balance, and origin.

You’ll learn what terroir truly means, how appellations signal style and quality, how to decode a wine label, and how to approach a wine list strategically when you haven’t tasted a single bottle on it.


Why This Matters

Business dinners, client meetings, and leadership settings often unfold around a table.

Yet many of us are never formally taught how to navigate a wine list, assess a bottle, or order for a group with confidence.

When you understand structure, origin, and style, you can make decisions calmly and quickly.


About Carolyn

Carolyn Aubry is a Montreal based sommelier with over 15 years of experience in the restaurant industry. In 2018, she became a certified sommelier with her WSET 3. She has worked in several wine focused restaurants such as Loic, Provisions, Polari and was the owner of her own wine shop, Vinorama.

For the past six years, Carolyn has focused on private wine education that is accessible, with the goal to remove the pretension that can surround the wine world.

Troisième Cercle is a private social club for women who want deeper conversations, real connections, and thoughtfully curated experiences across the city where ambition meets authenticity.


Culinary Pairing

The tasting will be accompanied by a curated cheese platter created by Chef Ashley Thornton, designed to pair with the wines we’ll explore throughout the evening.

Pairing is part of understanding wine. Texture, fat, salt, and acidity all interact and experiencing those contrasts live deepens your palate in a way theory alone cannot.


What to Expect

6:00 PM – Arrival & Welcome at Sub-Zero, Wolf & Cove
Settle in, connect, and prepare your palate.

6:15 PM – Guided Workshop & Tasting

We’ll cover:

– What terroir really means and why it matters
– How to read wine labels and understand appellations
– A simple sommelier tasting framework
– Old World vs. New World distinctions
– How to order wine for the table when you haven’t tasted it
– What questions to ask a sommelier
– Practical hosting considerations (pairing, serving temperature, glassware basics)

Throughout the evening, we’ll taste and analyze multiple wines together.

Members will also receive printed reference materials to take home; structured notes and frameworks you can revisit before your next dinner or event.

8:00 PM – Open Discussion & Wrap-Up

You’ll leave with sharper instincts, stronger vocabulary, and the confidence to navigate any wine list in Montréal or beyond.
