Kombucha—or fermented sweet tea—is an ancient health beverage with antioxidant and anti-microbial properties that may help regulate heart health, digestion, and liver health, as well as potentially providing anti-cancer benefits.

In this class taught by Margaret Riley, we will begin class with a kombucha tasting, where you will get to sample different flavors and have various snacks! During class, you will receive a SCOBY starter and instructional zine, learn how to make your own SCOBY, begin fermenting your own kombucha, formulate your unique kombucha recipe, and take home a flip-top bottle to continue fermentation and flavoring at home, and in 7-14 days, you’ll have a beautifully fermented kombucha! We will have green, white, and black teas available for fermentation!

Other topics we’ll go over include:

Social history and function of fermented foods and beverages

How to store kombucha

Using SCOBY hotels for multiple re-uses
