Iberian Table | Rioja: Spain's Most Famous Wine Region

​If you've ever ordered Spanish wine without knowing what to order, there's a good chance you ended up with Rioja. It's the most recognized wine region in Spain — and for good reason. This month we're going deep on it.

​In the kitchen: chorizo al vino, the classic Riojan tapa of chorizo braised low and slow in Rioja wine until it turns into something glossy and deeply savory, alongside pollo al chilindrón, a slow-braised chicken with roasted peppers and tomato that's been the Sunday dish of Navarre and Rioja for centuries.

​On the table: a lineup built around one of wine's great teaching tools — the Spanish aging tier system. Crianza. Reserva. Gran Reserva. We'll pour the same producer across all three levels so you can taste exactly what time in barrel and bottle actually does, and why those terms on the label matter.
