Memories of Dominica | Ada Dinner Series
Some of the happiest years of my childhood were spent in Dominica 🇩🇲 , where food was more than a meal—it was a way of life. Fresh fish brought in by local fishermen, breadfruit roasted over open flames, fragrant soups, tropical fruits, and meals shared with family shaped the way I experience food to this day.
In this menu, I’ve reimagined those memories through my own culinary lens. Jamaican oxtail is transformed into delicate dumplings inspired by my Chinese heritage, Chilean sea bass is paired with a vibrant Dominican Creole tomato sauce, and the evening ends with caramelized banana almond tarts with tamarind-rum caramel and milk tea Chantilly.
Memories of Dominica is a celebration of the island’s flavors, the people who shaped my earliest food memories, and the journey that brought me to where I am today.
