​About The Chef

​Julien Robillard has been cooking for over 30 years. After completing a year-long internship in Japan, he returned to Montréal to lead the team at Pastel, one of Canada’s top 25 restaurants. There, he honed his craft on menus rooted in both flavor intensity and storytelling.

​Now at Heni, Julien brings the same research-driven approach, exploring techniques like fermentation, miso and kojis, and maillard reactions. His passion for innovations and depth of experience make every dish a reflection of both tradition and creativity.

​Troisième Cercle is a private social club for Montréal women who want deeper conversations, real connections, and thoughtfully curated experiences around the city where ambition meets authenticity. Through intimate events, skill-building workshops, and cultural outings, we create a space for professional women to connect, grow, and belong.
