After day two wraps we're heading back into the city to Amazónico, one of the busiest restaurants in Madrid, where we have a private room to ourselves for the whole evening
Six courses, including cecina de wagyu, a whole carabinero off the grill, and a rack of vaca vieja aged forty days.
No panel, no deck. Just a good dinner with some of the best operators in the space.
