In this tasting class, we will explore the potato — a plant many of us have taken for granted due to its ubiquity — but who has changed the way the entire world eats, and whose story is one of violence, cultural transformation, survival and joy. We’ll begin our class with cooking potato on open-fire in salt, to honor its Indigenous origins in South America. Then, we will explore the way the potato has traveled by tasting several dishes from Africa, Asia, and Europe.
This is a food history class as well as a tasting class, so we will explore how the potato fits into larger conversations about labor, climate, folklore, and health.
