

Chocolate Drinks with Prophecy Chocolate

It is 2 pm on a Tuesday at Fabrik and you could use a pick me up while you get your work done. Luckily for all of us, Mateo of Prophecy chocolate will be coming down from Vermont to take care of you. He will make you a cup of chocolate and show you how to make a good one too. The chocolate drinking will only be about 30 minutes, but feel free to hang around, ask questions and chat. This is your chance to get a little nurturing and some great chocolate in the middle of the workday. Tuesday just got so much better.
AND....that is not all. We have a special guest straight from Oaxaca. His sister-in-law owns Sobre Masa in Brooklyn, a well respected restaurant featuring Oaxacan cuisine.
Gregorio is a master weaver and is a member of the only family in the region that is still fermenting a cousin of cacao called Theobroma Bicolor. It’s RARE and helps to create the beloved froth on some chocolate drinks. This is an extremely rare opportunity to learn about cacao from a man with a strong family history of with it for generations. If you have ever wanted to visit Oaxaca, this is the closest you will get to it on a workday.

Who are we?
Mateo is the founder of Prophecy Chocolate in Vermont. Mateo has spent years living in Peru, Colombia, and Mexico, learning directly from campesinos how cacao is grown, harvested, and transformed. In 2014, while living in the “Eyebrow of the Jungle” in Peru, he learned to make drinking chocolate using traditional methods, an experience that shaped his lifelong love for cacao.
He later imported heirloom cacao from the Cusco jungle and apprenticed in European‑style chocolate making. In 2019 he founded Prophecy Chocolate, creating craft chocolate from direct‑trade cacao. In 2025 and 2026, Prophecy Chocolate earned 13 medals in the International Chocolate Awards.
Mateo teaches about cacao at expos and universities, and when he isn’t making chocolate, he’s often on farms or in the forest, learning from growers and enjoying the plants that inspire his work
