For our Coastal Spain Summer Table, we're cooking and pouring on the patio behind Dashi. On the glass side: a guided lineup from Spain's Atlantic edge — Albariño, Txakolina, Godello, and Cava (or pét-nat) — wines shaped by cool air, granite soils, and salty ocean breezes. On the food side: grilled oysters, shrimp skewers with smoked paprika, and grilled bread with anchovies and good olive oil, all cooked live on our outdoor grill.
