Bridges sits at 9 Chatham Square, where Chinatown meets the entrances to the Brooklyn and Manhattan bridges, a Michelin-starred bistro that opened in fall 2024 and became one of the hardest tables in the city almost overnight. It belongs to chef Sam Lawrence, who learned the way the best researchers do: by apprenticing himself to the masters. Years at The NoMad, then leading the kitchen at Estela under Ignacio Mattos, where he says the cooking had a freedom and identity he carried with him. He listened, took notes, and refined his method until he was ready to go out on his own. The result earned a Michelin star in under a year, which is what good methodology looks like when you finally publish.
