Live Rooftop Chef’s Table with Cintet & Gerard Blanco

Each month during our chef residencies, we’re opening trobar on one of our usual closed evenings for something a little different.
trobar residency nights are intimate evenings that bring people together around one long table for an immersive dining experience where the cooking becomes part of the evening itself.
Our first edition welcomes Jacint Carafí (Cintet) and Gerard Blanco, two of Catalonia’s most exciting young chefs.
Throughout the evening, selected courses will be prepared live on the rooftop by Cintet and Gerard, giving guests a front-row seat to the creativity, precision and spontaneity behind their cooking. As the dishes come together, the chefs will share the stories, techniques and seasonal ingredients that shape the menu, creating an experience that feels as much like a live performance as it does a dinner.
The evening begins with return transport from Palma before guests gather on the rooftop for a welcome cocktail. You’ll then enjoy an exclusive multi-course sharing menu, accompanied by a selection of wine, beer and water served throughout dinner.
After dinner, the evening moves downstairs into trobasement, where the DJ takes over and the experience shifts into a lively after-party. Your ticket continues to include a curated selection of beer, wine, cocktails and long drinks served throughout the after-party, so you can simply relax, dance and enjoy the night before the shuttle returns to Palma.
This is more than dinner. It’s an evening of live cooking, exceptional food, generous hospitality, music and community—bringing Palma to trobar and offering a rare opportunity to experience two exceptional chefs at work, up close.

The Chefs:
Based in Catalonia, Gerard Blanco and Jacint Carafí Sáez share a culinary philosophy rooted in seasonality, local sourcing, and the simple pleasure of gathering around a table.
Jacint’s journey has been shaped by years working in kitchens across Catalonia, Austria and Mexico. Growing up on his family’s winery in the Penedès region, surrounded by vineyards and the rhythms of the harvest, he developed a deep respect for produce, landscape and the changing seasons that continues to define his cooking today.
Gerard arrived in the kitchen by a less conventional path. After studying classical piano, jazz and nursing, he taught himself to cook, driven by curiosity, creativity and a desire to create meaningful experiences through food. For him, cooking is a form of expression, using flavour, texture and atmosphere to evoke emotion and tell stories.
Together, they have built careers that extend beyond the traditional restaurant model, embracing private dining, pop-ups, collaborative events and digital storytelling to create a more open and contemporary relationship with food.
Bringing together Jacint’s technical precision and deep connection to the land with Gerard’s intuitive, creative approach, they create generous Mediterranean cuisine that is thoughtful, playful and designed to be shared.

trobar is a 3 level restaurant, cocktail bar, contemporary art gallery and concept shop, combining food, art and design to create a unique destination in the heart of Cala Ratjada.
Every cocktail is served in artist-made glassware, while every dish is presented on handmade ceramics created by contemporary artists.
