​People will tell you dark chocolate and flying airplanes have nothing in common. People are wrong.

​Both demand a pre-flight check. Both get worse when rushed. Both have a bitterness the amateurs can't handle and the professionals learn to respect. Both will humble you at altitude (70% cacao, 10,000 feet — pick your poison). And both are gatekept by enthusiasts who will absolutely corner you at a party. Tonight, I am that enthusiast.
