Here, exceptional cuisine serves as the cornerstone for forging new and meaningful connections, against the backdrop of Singapore’s iconic district, celebrating our roots and shared heritage.
The concept is simple: sign up, show up, and dine with fellow Stellars, without knowing who they are until the actual dinner itself. Our aim is to foster an atmosphere where authentic connections are made and unexpected conversations embraced. As the night unfolds against the breathtaking city skyline and the vibrant downtown area, Eclipse promises an unforgettable dining experience for food and cocktail enthusiasts alike. Chef and Owner Samuel Quan, fondly known as Sam, draws inspiration from the transition of Chinatown's light-to-night hustle and bustle, a vision cultivated during the restaurant's construction phase. This inspiration gave birth to the name "Eclipse," capturing the essence of this unique dining destination.
Chef Sam had the opportunity to travel and undertake an apprenticeship at the renowned three Michelin-starred Aponiente in Spain. After which, he led the culinary team at Spanish- influenced restaurant Element on Tras Street located in Amara Hotel. These eye-opening experiences had him work alongside professionals who shaped his philosophy on food quality and culinary excellence. This influenced his creations today, making him the Apprentice Chef of the Year at the 2017 World Gourmet Summit.
Inspired by a marriage of his roots in European cuisine and his own Asian background, Eclipse serves a multitude of east-meets west fusion delicacies made from Chef Sam and the team’s favourite and nostalgic ingredients.
