​We’re excited to introduce one of our Open Table Discussion leads for Foodtech Forum 2026

​Elena Walden, Senior Policy Manager & Research Lead at The Good Food Institute Europe, will host a session on: “Mimicry, blends or back to beans: what’s next for plant-based in the Nordics?”

​This session brings together perspectives from consumers, investors, retailers, and the broader food ecosystem to unpack which trends are overhyped, underestimated, evolving, or already becoming mainstream.

​Together, we’ll explore:
– Which plant-based trends are gaining real momentum in the Nordics
– Whether consumers are moving toward mimicry products, blended formats, or simpler ingredient-based foods
– What investors and retailers are prioritising right now
– What the future of the Nordic plant-based category could look like

​The goal is an open and inclusive discussion that takes a step back and asks: where is the category really heading?
