We’re bringing back an appam taco with sukka seitan and rasam that we made for one of our suppers a while ago. It was supposed to be on the menu once, but it was one of those dishes that never really left our heads.

And since we’re talking tacos, we’re making some slightly more conventional ones too — fresh corn tortillas, slow-cooked jackfruit birria, queso and a consommé made for dunking.

Before all of that, roasted vegetables and probably too many things to dip them into.

And to finish, payasam cheesecake with kewra and gulab jal sorbet.
