Dinner at Fiaschetteria Pistoia

We will order and share everything family style to increase diversity of what we eat, and split the bill equally. This is a Tuscan restaurant recommended to me by a knowledgeable friend. He recommended the Chicken Liver Crostini, the pappardelle al ragu and maccheroni sull’anatra as good and authentic.
I have called this establishment - because they are a small restaurant in Manhattan, every seat counts for them. They were adamant the reservation should be exact, and will charge us if we make one of their seats go to waste. I will make a reservation on 12/8/25 5pm. Therefore, for this event we'll have a policy that any cancellations after 12/8/25 5pm and no shows on the day of will be on the hook for their share of any empty-seat fee we incur. I will take a screenshot of the registrations at 12/8/25 5pm EST, and equally divide the total empty-seat fee amongst everyone who ended up not showing up from that list, and send venmo requests (since I will be the one paying the empty seat fee in that case). Please note that the fee might be quite expensive, perhaps even as expensive as the meal itself - it was hard to communicate on the phone due to static and the staff member spoke really quickly.
When I make the reservation, I'll lock the size cap of the event as the size of the list of registrants right then (This has been done as of 12/8/25). If there's a waitlist after that and someone needs to cancel, I'll apply the waitlist to avoid the cancellation fee in the order where the earliest cancellation gets priority. If you need to cancel and you find your own replacement, that works too, please just let me know who it is.
