Australia doesn't really do winter.
We spend June, July and August waiting for it to be over — rushing through the cold, the grey, the early dark, eyes fixed on the other side where summer is waiting. Winter here is something to survive, not savour.
We disagree.
Winter is the season built for the table. For slow-cooked things, warm rooms and the particular pleasure of not going anywhere. In colder parts of the world, it's the season that creates traditions: the meals families return to year after year and the rituals that make cold months feel like something worth having. Christmas crackers. Roast dinners. The kind of dessert that makes you loosen your belt and stay another hour.
On Saturday 29 August, we're opening our Darlington terrace for an evening that takes winter at its word. A long table. Sharing plates built for the season. Something slow-cooked. Something with butter. Christmas crackers, because James insisted — and honestly, he's right.
Ten seats. One sitting. Three hours minimum.
This is Before Spring — the evening before everything speeds up again.
