

Iberian Table | Portugal: Wine Discovery!
Portugal makes some of Europe's most interesting wine. Most Americans have barely scratched the surface — and that's exactly why we find it so exciting.
This month we're cooking from the Alentejo, Portugal's vast, sun-baked interior, where the food is ancient and the hospitality is the kind that starts with bread. We'll make açorda alentejana — a rustic, silky soup built from day-old bread, garlic, olive oil, eggs, and fresh herbs — and roast porco preto, the extraordinary Iberian black pig, the same breed behind jamón ibérico, with its remarkable marbling and depth of flavor.
The wines will take you across the country: a coastal white to open with, a progression through Portugal's underrated reds from regions like Dão and the Douro, and — to finish — a pour of Madeira, the fortified wine of a tiny Atlantic island that outlasted empires and is still one of the most singular things you can put in a glass.
