Join us for a hands-on culinary medicine session where cooking meets nutrition science. You'll prepare three dishes built around ingredients that are packed with beneficial nutrients: crudité with chickpea dip, a white bean Mediterranean salad, and a strawberry basil smoothie.
While we cook, we'll break down:
Seasonal produce: how to choose it, why it matters for both flavor and nutrient density
Plant bioactives: what bioactives actually do in the body, beyond the marketing language you've probably heard
Beans and legumes: the mechanistic case for their role in longevity, from fiber and resistant starch to their effect on gut microbiota and metabolic markers
Foods that fight inflammation: what is inflammation and what the impact of our dietary choices has on our bodies
You'll leave with three recipes you can make again, and a working understanding of why they belong in a balanced diet.
