BARRACA 005 • OPEN KITCHEN
Si quieres colaborar, escríbenos a hola@barraca.house 🫡

03 · The after

🇺🇸 In a restaurant, whatever decides whether you come back happens behind the kitchen door. This time the door is open.
This session doesn't have a sponsor to pay for the drinks yet. If you'd like to help, write to us at hola@barraca.house 🫡
The first session of 2027 opens the kitchen. Two València founders who sell something you eat, telling the part the customer never sees: the technology, the numbers and the decisions behind every order. Both started their careers a long way from a kitchen: one investing in startups, the other writing software.
Alex González Urbón spent years on the other side of the table, analysing startups to invest in, before co-founding Hundred Burgers and opening the first restaurant a month before lockdown. Today The World's Best Burgers ranks it first in the world for the third year running, and since 2025 a fund has owned the majority while its founders still run it.
Fran Ceacero is a software engineer and the co-founder and CTO of Tu arrocero, which cooks paellas, brings them to your door at the time you pick and comes back for the pan. Its AI recommendation system reads sales and waste by product, shop and day to decide how many paellas get cooked, and in 2026 it won the company the Innovation and Quality award at the Premios Hostelería Valencia.
Two half-hour talks, both from the inside. As always, questions don't interrupt: they're saved for the after.

The questions about margins, waste and rounds get answered here, standing up, with a beer.
WHAT YOU CAN ASK
Anything. How you decide how many paellas to cook on a Saturday, what the model does and what a person still decides, and how much gets thrown away. How a burger stays the same burger in València and in Madrid, what changes when a fund comes in as majority owner and the founders stay in charge, and how all of that looks after years of investing in startups.
Questions don't interrupt the talk; they're saved for the after, standing up and with a beer, which is where they get answered properly.
WHO'S IN THE ROOM
Founders, engineers, product people and people running a business in València, with software inside it or not. The room is small on purpose, so you can talk to anyone in it.
HOW TO GET IN
Guest list only, and the door is free. Applying isn't admission: the guest list is closed by hand, session by session, and we always write back.
THE HOUSE
BARRACA Founders House is the house València's founders and builders come back to. Numbered sessions, small groups and the same faces coming back.

The talks are in Spanish. The room runs in Spanish and English; people switch mid-sentence and nobody minds.
