

CAA | Send Off Dinner 2026
It's that time of the year when Columbia University alumni will meet to say goodbye to the newly admitted students. In its 4th year in Milan, the event has always been a blast with 50+ alumni/students attending to share memories of the wonderful time at school.

Al Fresco Aperitif: a selection of finger food served with white, red, or sparkling wine
Artisanal Toasted Bread with Pancetta Felina, acacia honey, and rosemary dust.
Crispy Bruschetta with red tomato tartare, fresh basil, and lemon zest.
Sous-vide Veal Cube served as finger food with salsa tonnata and Pantelleria capers.
Gorgonzola and Mascarpone Mousse topped with a walnut kernel.
Parmigiano Reggiano Chunk served with mâche salad and balsamic vinegar glaze from Modena.

Fresh Pasta "Caramelle" (candy-shaped) filled with ricotta and spinach, served with hazelnut butter, sage, and 24-month aged Parmigiano Reggiano.
Saffron Risotto “Milanese Style” creamed with veal bone marrow.
Paccheri Pasta with a cream of red and yellow cherry tomatoes, fresh basil, and 24-month aged Parmigiano Reggiano.
Sliced Beef "Robespierre Style" (with green pepper and rosemary) served with herb-roasted potatoes.
Crispy Eggplant Cutlet topped with arugula, cherry tomatoes, and shavings of Parmigiano Reggiano.

"Meneghina" Apple and Hazelnut Cake served with mascarpone cream.
