Welcome to Chapter IV of Pre-Funk with Plum—an ongoing gathering hosted by Evan Flory-Barnes, blending a world-class family-style feast with live, spontaneous music in the Sky Lounge. This will be our first Sunday Supper Edition.
For this chapter, we are leaning all the way into "Chops"—both on the plate and on the stage.
The Music
Featuring Chops Duo—a long-standing collaboration between Evan Flory-Barnes (double bass) and Andy Coe (guitar). Inspired by the legendary virtuosity, humor, and telepathic interplay of the Niels-Henning Ørsted Pedersen & Joe Pass duo album Chops, Evan and Andy bring decades of shared musical history, deep grooves, and sharp wit to an intimate, unscripted performance.

The "Chicken Pot Tie" Variations: A playful, multi-crust exploration ranging from classic buttery pie dough and biscuit crowns to a flaky Pad Thai puff pastry and a Thai Larb Gai English mash pie.
The Chops: Tender, slow-braised lamb shoulder and savory smothered pork chops.
The Sides: Charred Southern corn & okra succotash and garlic-soy glazed baby bok choy.
