Meet The Chef: Nominal x Chef Ruwaida
A Taste of the Middle East: A Chef-Led Storytelling Experience
For the first time, Nominal is joining Chef Ruwaida, known for bringing Arizona authentic Palestinian and Syrian dishes, for an intimate dinner experience unlike anything we’ve hosted before.
Two hours. One room. One chef. Six courses, each one telling a story.
This is more than a dinner, it’s an immersive experience rooted in Palestinian and Syrian heritage. Guests will hear the meaning behind each dish straight from the source and experience the story behind the food in a deeply personal way.
We’re taking over a hidden gem in downtown Phoenix for one evening only. Guests will enjoy live music and mingling over a generous appetizer spread before the six-course dinner begins.

Main Dishes
Arabic Salad Finely hand-chopped salad made from the freshest vegetables, herbs, and a light lemon and olive oil dressing.
Musakhan Rolls A modern twist on the traditional Palestinian favorite. Tender shredded chicken and caramelized onions are wrapped in thin bread, baked until golden and crispy, then glazed with pomegranate molasses and sprinkled with fragrant sumac.
Harra Isbaoh A traditional Syrian vegan comfort dish featuring hearty brown lentils and broken pasta in a rich tamarind and pomegranate sauce, creating a perfect balance of sweet and tangy flavors. Finished with crispy fried pita chips, caramelized onions, fresh garlic, and cilantro.
Makloubeh (Upside-Down) A classic Middle Eastern dish made with layers of aromatic spiced rice, tender lamb, beef, or chicken, and roasted vegetables such as eggplant, cauliflower, and potatoes. Served inverted to reveal its beautiful layered presentation.
Stuffed Grape Leaves Tender vine leaves wrapped around a savory filling of seasoned ground meat and rice. A beloved Mediterranean and Middle Eastern delicacy.
Dessert
Rice Pudding (Roz Bel Haleeb) A creamy Middle Eastern dessert made with short-grain rice, milk, and sugar, delicately flavored with orange blossom water, rose water, and mastic. Garnished with rose jam and crushed pistachios.
