Join us for an exclusive evening at the Celtic Club as we showcase the exceptional craftsmanship of Woodlands Wines, Wilyabrup Valley – Margaret River’s most celebrated terroir.
This premium tasting has been carefully curated, with a seasonal menu designed around Woodlands’ outstanding wines:
Entree - Begin the evening mingling over smoked salmon canapés with a glass of the 2023 Wilyabrup Valley Chardonnay – a wine bursting with citrus and stone fruit, with a fine mineral edge that cuts beautifully through the salmon’s richness.
Move to the 2023 Woodlands Brook Chardonnay, whose creamy palate, hints of white peach and toasted cashew, echo the richness of a classic seafood chowder.
For the main course, enjoy pan-seared venison fillet with the Wilyabrup Cabernet Merlot – a blend showing layers of blackberry, cassis and fine tannins, a perfect counterpoint to game with a cassis jus.
To finish, a Cashel blue cheesecake with honey-poached pear and walnut crumble is paired with the 2021 Clementine – an elegant blend of Cabernet, Malbec, Merlot and Petit Verdot. It has a bright ruby colour with soft texture and a long finish it will contrast beautifully with the cheese.
