there's a version of summer that exists only in southern Ukraine.
it's the Black Sea at dusk. sunflowers so tall they block the road. a table outside that nobody planned but everyone ended up at, eating things pulled from the garden an hour ago, drinking something cold, staying longer than they meant to.
this dinner is about that feeling.
southern Ukrainian food is not what most people picture when they think of Ukraine. it's sun-drenched and generous, shaped by the coast, by the steppe, by the people who've been trading and cooking and sitting at tables there for centuries. it's food that tastes like heat and salt and somewhere specific.
sixteen seats. one long table. five courses built around the flavours of that part of the world, in the middle of Warsaw, in the middle of whatever season we're in.
